And here I thought I was the only one to discover the special qualities of micro planing ginger! Was to be part of my "secret sauce"!
Works with nutmeg and probably as a replacement for a garlic press too. Same planer model. It's my workhorse.
I notice he uses a potato peeler on the ginger. You can do just as well with less loss simply with the edge of a teaspoon. It really works. (Cut off the knobby parts first)
